Continuing Education

Nutrition courses may fulfill continuing education requirements for many healthcare professions and states. Registrants are responsible for contacting licensing bodies for respective health professions to confirm approval.

CNS: These courses were designed to fulfill a portion of the current academic eligibility requirements for MD/DO pathway to the Certified Nutrition Specialist (CNS) credential.

To grant the CNS for the MD/DO pathway, the Board for Certification of Nutrition Specialists (BCNS) requires an MD/DO degree from a regionally accredited university, a license to practice, a minimum set of nutrition-related courses, a specified practice experience, and successful completion of the CNS Certification Examination. BCNS reviews each CNS candidate’s application individually to determine eligibility. To learn more about becoming a CNS, visit the BCNS website.

“Poor nutrition is now considered one of the leading causes of preventable deaths in the United States. While the need for healthcare providers to counsel their patients about nutrition and nutrition-related disorders is evident, practicing clinicians often rate their own clinical nutrition knowledge and counseling skills as inadequate.

With the World Health Organization predicting that by 2020, two-thirds of diseases worldwide will be the result of nutrition and other lifestyle choices. It is imperative that healthcare providers have sufficient knowledge and skills to effectively counsel patients on healthy dietary practices and lifestyle change.”


Dr. Gena Kadar is a nutrition professor, author, Certified Nutrition Specialist, and licensed Doctor of Chiropractic.

Dr. Kadar is professor of clinical nutrition and Chair of the Department of Nutrition at SCU. She led the development of clinical nutrition guidelines on obesity and cardiovascular health management, co-authored a textbook chapter on metabolic and endocrine dysfunction, and her scholarly work has been published in the Journal of Interprofessional Care, Global Advances in Health and Medicine, Journal of Chiropractic Education, the Journal of Manipulative & Physiological Therapeutics, and the Journal of Nutrition, Health, and Food Engineering.

While at SCU, she has served as a four-term elected President of the Faculty Senate, Chairman of the Division of Integrative Health Sciences, and Chairman of the Department of Healthcare and Community Integration, the Professional Personnel Committee, the Academic Programs Task Force, and the Task force on Interdisciplinary Education. She has been granted various accolades and awards for teaching, leadership, and research from both national and international organizations and from students and peers.

For nearly a decade, she led a successful clinical nutrition and chiropractic practice. She also served as a Corporate Wellness Consultant leading multinational companies in the development and implementation of innovative wellness initiatives, and was the Executive Director of The Dick Butkus Center for Cardiovascular Wellness, a nonprofit organization committed to preventing the loss of life from sudden cardiac arrest and cardiovascular disease.

Professional Service
She has also served on the Board of Directors of the Orange County California Chiropractic Association and Board of Directors of the American Holistic Health Association, the Education Working Group of the Academic Collaborative for Integrative Health, and as a site team member for the Accreditation Council for Nutrition Professional Education. For four consecutive years, she was Chairman of UC Irvine, School of Medicine’s Susan Samueli Center for Integrative Medicine’s Annual Women’s Wellness Conference, and was among a distinguished group of honorees to receive the 2012 teaching award.

Her first book, A Manner of Living, translates cutting edge research into easy to understand ideas, and draws upon her experience from countless interactions with patients and students over the years as a professor, doctor and expert in clinical nutrition. It offers the reader an evidence-based, realistic and sustainable approach to eating well, living well, and being well… for life.
